How to Make Okoho Soup - Recipe from Benue State Idoma

This is okoho Soup, a special soup of the idoma people of benue state. You can use this to eat any swallow food of your choice. So delicious!

Ingredients:





Okoho stick,

Oil,


Cup of melon,

Meat,

Dry catfish,

Crayfish,

Okpehe (lowcost beans),

Seasoning and salt.

Method:

1. Scrape off the white part of the okoho stick, hit it hard with a pestle, shred off the flesh off the inner part of the stick.

2. Tie the fleshy part together put it in a port, add oil and one cup of water.

3. Boil for 5 mins and drop.

4. Use your clean hand to squize out the juice until it draws very well.

5. Remove the shreded part, filter the juice using your rice washer to remove smaller particles. Set your okoho juice aside.

6. Grind your melon with a little pepper and a little crayfish, add a little hot water and mix very well until oil start coming out.

7. Mold into tiny balls and cook in not too much water for twenty mins, remove the mellon from the water and set aside.

8. Add your meat, lowcost beans, dryfish, seasoning, pepper and salt into the water and cook untill the meat is well cooked.

9. Add the earlier set aside mellon balls and cook together for 5 mins so that the ingredients can enter into the mellon balls.

10. Add your already set aside okoho juice, Stir very well and drop your pot of soup immediately to maintain its draw characteristic.





NOTE- You can decide to cook it without oil.
